Ingredients

  • 30 oz. can yams, well drained
  • 1/3 cup orange juice
  • 1 tablespoon cornstarch
  • 1/2 cup brown sugar, firmly packed
  • 1/4 cup butter, melted
  • 1/2 cup walnuts, coarsely chopped
  • 1 1/2 cups miniature marshmallows

Instructions

  1. Arrange the drained yams in a 1 1/2-quart casserole dish.
  2. In a medium bowl, combine orange juice and cornstarch; stir until the cornstarch is completely dissolved.
  3. Blend in brown sugar and melted butter.
  4. Add coarsely chopped walnuts and pour the mixture over the yams.
  5. Microwave on high (10) for 10 to 12 minutes.
  6. Arrange miniature marshmallows on top of the yams.
  7. Microwave on high (10) for 1 to 2 minutes, rotating the casserole 1/4 turn after 45 seconds.
