Manhattan Apple Salad

A refreshing, gelatin-based salad featuring crisp tart apples and crunchy celery, ideal for light gatherings or as a cool side dish with a tangy flavor profile.

Ingredients

  • 1 (3 oz.) pkg. lemon gelatin
  • 1 Tbsp. vinegar
  • 1/2 tsp. salt
  • 1 c. tart apples, diced
  • 1/2 c. celery, diced

Instructions

  1. Dissolve lemon gelatin in 2 cups hot water, add vinegar and salt.
  2. Pour a thin layer of the gelatin mixture into a mold and chill until firm.
  3. Combine diced tart apples and celery, then place them in the mold over the set gelatin.
  4. Pour the remaining gelatin over the apples and celery in the mold.
  5. Chill until the gelatin is fully set.
  6. Unmold the salad onto crisp lettuce before serving.
