Maple Oat Banana Bread

Ingredients

  • 1 1/2 c. self-rising flour
  • 1 1/2 c. oats
  • 1 c. oil
  • 2 c. mashed ripe bananas (4 to 5 medium)
  • 1 c. chopped nuts (black walnuts)
  • 4 eggs
  • 1 tsp. soda
  • 2 c. sugar

Instructions

  1. Grease a tube pan and dust with oatmeal.
  2. Combine flour, oats and soda; toss.
  3. In mixing bowl, cream oil and sugar.
  4. Mix in bananas, eggs and walnuts.
  5. Add dry ingredients.
  6. Mix on low speed until thoroughly blended.
  7. Pour into prepared pan.
  8. Bake at 325° for 1 hour and 20 minutes.
  9. Cool 5 minutes in pan.
  10. Cool on rack completely.
  11. Drizzle with Maple Glaze.
