Ingredients

  • 5 lb. new red potatoes
  • 1 lb. bacon
  • 8 oz. Velveeta cheese
  • 12 oz. mayonnaise
  • 1 onion

Instructions

  1. Fry bacon until crispy and crumble into small pieces.
  2. Saute diced onion in 3 tablespoons of bacon drippings until translucent.
  3. Boil potatoes with skin on until tender, then cut into chunks.
  4. Cube Velveeta cheese.
  5. In a large bowl, combine the potatoes, bacon, onion, Velveeta, and mayonnaise; mix well.
  6. Transfer the mixture to a 9 x 13-inch casserole dish.
  7. Bake uncovered at 350°F (175°C) for 20 minutes or until the cheese melts and the dish is heated through.
