Ingredients

  • 1/4 lb diced boiled or cooked smoked ham
  • 2 Tbsp golden raisins
  • 2 Tbsp diced green bell pepper
  • 2 Tbsp diced celery
  • 2 Tbsp diced red onion or scallion
  • 2 tsp country Dijon-style mustard
  • 1 tsp honey
  • 8 lettuce leaves

Instructions

  1. In a small mixing bowl, combine the diced ham, raisins, green bell pepper, celery, red onion or scallion, mustard, and honey. Stir until thoroughly blended.
  2. Line the center of a serving platter with lettuce leaves. Arrange tomato slices along the side of the platter. Top the lettuce with the ham mixture.
