Ingredients

  • 1 large onion
  • 2 or 3 large potatoes, diced
  • 1 16 oz. package frozen mixed vegetables
  • 1 small can stewed tomatoes
  • 1 small can tomato soup
  • 1/4 teaspoon salt
  • 1/2 stick butter or margarine
  • 1/4 teaspoon pepper

Instructions

  1. Add all raw vegetables to a stew pot and cook for 30 minutes.
  2. Add salt, butter or margarine, stewed tomatoes, tomato soup, and fill the pot three-quarters full with water.
  3. Stir occasionally to prevent sticking.
  4. Serve the stew with crackers or over cornbread, accompanied by a glass of iced tea.
