Tips & Substitutions

To enhance the flavor of your marinated kale, consider using a flavored oil, such as garlic-infused or chili oil. If you don’t have vinaigrette on hand, a simple mix of olive oil, vinegar, and your favorite herbs works well. For added texture, try incorporating roasted nuts or seeds. If you're looking to add protein, consider tossing in some chickpeas to make it a complete meal.

Serving Suggestions

This marinated kale is delicious as a side dish or a light main course. Serve it alongside grilled chicken or fish for a protein boost, or pair it with a grain dish like Spinach And Rice for a wholesome meal. It also works well as a topping for grain bowls or mixed into salads, adding depth and flavor.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. The marinated kale can be enjoyed cold or reheated gently on the stovetop over low heat, adding a splash of water if necessary to prevent sticking. Avoid microwaving, as it can make the kale overly wilted.

Frequently Asked Questions

Can I use a different type of dressing for this recipe?

Absolutely! While Ken's dressing adds a unique flavor, any vinaigrette or homemade dressing you enjoy will work. Experiment with different flavors like balsamic or citrus-based dressings to find your favorite combination.

How can I make this recipe vegan?

This recipe is already vegan-friendly as it uses plant-based ingredients. Just ensure that the vinaigrette you choose is also vegan. You can easily make your own vegan dressing by combining olive oil, vinegar, and herbs.

What can I do if my kale is tough?

If your kale is tough, consider massaging it with a bit of oil and salt before cooking. This process helps to break down the tough fibers, making the kale more tender and enjoyable. Alternatively, you can use baby kale, which is naturally more tender.
