Ingredients

  • 1 (3 to 4 lb.) venison roast
  • 2 cloves garlic, minced
  • 2 Tbsp. vegetable oil
  • 1 c. cola flavored beverage
  • 1 1/4 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1 Tbsp. white vinegar
  • 2 Tbsp. soy sauce
  • 2 Tbsp. catsup

Instructions

  1. Place the venison roast in a shallow baking dish and set aside.
  2. Saute garlic in vegetable oil; add cola beverage and remaining ingredients, stirring well. Pour the marinade over the roast.
  3. Cover and marinate in the refrigerator for 8 hours, turning the meat occasionally.
  4. Remove the roast from the marinade, reserving the marinade. Place the roast on a large piece of heavy-duty aluminum foil and bring the edges up around it, leaving the top open.
  5. Pour the reserved marinade over the roast.
  6. Bake at 325°F (163°C) for 2 1/2 hours or until a meat thermometer registers 170°F (77°C), basting every 45 minutes.
