Tangy and flavorful marinated tomatoes with vinegar, garlic, and spices, perfect as a refreshing side or appetizer for summer meals and gatherings.

Ingredients

  • 6 medium tomatoes, peeled
  • 1 small onion, finely chopped
  • 3/4 cup vinegar
  • 1/2 cup vegetable oil
  • 2 teaspoons sugar
  • 1/2 teaspoon red pepper sauce
  • 1 clove garlic, crushed

Instructions

  1. Place peeled tomatoes in a 9 x 9 x 2-inch baking dish.
  2. Mix vinegar, vegetable oil, sugar, red pepper sauce, and crushed garlic to create the marinade.
  3. Spoon the marinade over the tomatoes, covering them evenly.
  4. Cover and refrigerate, turning occasionally, for at least 8 hours but not longer than 24 hours.
  5. Sprinkle with parsley, if desired, before serving.
