Ingredients

  • 5 or 6 medium zucchini, sliced thin
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper (optional)
  • 1/4 cup green onion, sliced
  • 3/4 cup seasoned rice vinegar
  • 2/3 cup sugar
  • 1/4 cup white vinegar
  • 1/4 cup salad oil
  • 3 to 4 teaspoons dill weed
  • 1 teaspoon salt

Instructions

  1. Place sliced zucchini, diced celery, diced bell pepper (if using), and sliced green onion in a large bowl with a tight-fitting cover.
  2. Mix together the seasoned rice vinegar, sugar, white vinegar, salad oil, dill weed, and salt.
  3. Pour the marinade over the vegetables in the bowl.
  4. Cover and refrigerate for at least 24 hours before serving to allow flavors to meld.
