- Line a 15 x 10-inch pan with brown paper.
- Soften packages of gelatin in 1/2 cup cold water.
- In a 2-quart saucepan, mix 1 cup sugar, 1 cup corn syrup, and 1/3 cup water.
- Cook, stirring, until sugar dissolves.
- Cook, without stirring, to soft ball stage (240°F).
- Stir in gelatin and 1 teaspoon vanilla.
- Cool for 10 minutes.
- Slowly add beaten egg white to the syrup mixture, beating on high speed to make soft peaks.
- Spread the mixture into the prepared pan and let stand uncovered overnight.
