Ingredients

  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 1 egg white

Instructions

  1. Line a 15 x 10-inch pan with brown paper.
  2. Soften packages of gelatin in 1/2 cup cold water.
  3. In a 2-quart saucepan, mix 1 cup sugar, 1 cup corn syrup, and 1/3 cup water.
  4. Cook, stirring, until sugar dissolves.
  5. Cook, without stirring, to soft ball stage (240°F).
  6. Stir in gelatin and 1 teaspoon vanilla.
  7. Cool for 10 minutes.
  8. Slowly add beaten egg white to the syrup mixture, beating on high speed to make soft peaks.
  9. Spread the mixture into the prepared pan and let stand uncovered overnight.
