Ingredients

  • 1/2 cup water
  • 6 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla
  • 3 egg whites
  • pinch of salt

Instructions

  1. In a saucepan, combine water, sugar, and cornstarch.
  2. Heat, stirring, until thick and clear.
  3. Cool slightly.
  4. Stir in 1/2 teaspoon vanilla, if desired.
  5. In a large bowl, whip egg whites with a pinch of salt until droopy peaks form.
  6. Continue whipping as you slowly pour in the sugar-water mixture.
  7. Whip until peaks will stand up straight.
  8. Spread over warm filling, pushing the meringue against the crust.
  9. Bake at 450° F (232° C) for 5 to 7 minutes or until nicely browned.
  10. Cool on a rack out of drafts and do not refrigerate until completely cooled.
