Ingredients

  • 6 to 8 potatoes, peeled and quartered
  • 1/2 lb. carrots, chopped
  • 3 to 4 stalks celery, chopped
  • 1/2 onion, chopped
  • salt and pepper to taste

Instructions

  1. Place all vegetables (potatoes, carrots, celery, onion) in a saucepan and cover with water.
  2. Bring to a boil, then simmer until all vegetables are tender.
  3. Mash all the vegetables together in the saucepan.
  4. Add butter and warm milk to achieve desired soup consistency.
  5. If the soup becomes too thin, add Potato Buds to thicken.
