Ingredients

  • 2 Anaheim Chili Peppers - roasted, peeled, stems removed and chopped
  • 1 Small Jalapeno pepper, seeded and diced
  • 1 Small Onion - chopped
  • 1 Clove Garlic - minced
  • 2 T. Butter
  • 2 Cups fresh (or frozen) corn. If using fresh, cut off the cob and boil for 5 minutes. Thaw frozen corn
  • 1/2 Cup Cream
  • 1/4 Pound Cheddar Cheese, grated
  • Salt and Pepper to taste

Instructions

  1. Saute onion and garlic in butter until soft. Add the chiles and corn and saute for 2 additional minutes. Reduce heat, add the cream and cheese and simmer until vegetables are done and cheese is melted and sauce is reduced.
