- Mix together the thick white sauce, minced onion, parsley, and chopped cooked meat.
- Chill the mixture in the refrigerator.
- Shape into pyramids or cylinders.
- Roll in fine dry bread crumbs.
- Set aside in the refrigerator for 2 to 3 hours.
- Dip in a mixture of 1 slightly beaten egg and 2 tablespoons water.
- Roll again in fine dry bread crumbs.
- Let dry again for 1 1/2 hours in the refrigerator.
- Fry in deep fat at 400°F until delicately browned, about 1 1/2 to 2 minutes.
- Drain on absorbent paper in a warm place.
- Keep hot in the oven until ready to serve.
- Serve hot with mushroom, tomato, or desired sauce.
