Mediterranean-Style Vegetables
Ingredients
- 1 cup zucchini, sliced ⓘ
- 1 cup yellow squash, sliced ⓘ
- 2 cups bell peppers, sliced (I use a mixture of red, yellow, and green) ⓘ
- 2 cups broccoli florets ⓘ
- 14 cup vegetable broth
- 2 garlic cloves, minced
- 12 teaspoon dried basil ⓘ
- 12 teaspoon dried oregano
- 14 teaspoon pepper ⓘ
- 3 medium tomatoes, chopped ⓘ
Instructions
- Comine all ingredients except tomatoes in a large saucepan and bring to a boil.
- Reduce heat, cover, and simmer for about 8 minutes or till vegetables are crisp-tender.
- Stir in tomatoes and serve.
