Melon Salad

A refreshing melon salad featuring sweet melon, tangy vinaigrette, and crisp greens, perfect for a light, seasonal appetizer or side dish for warm weather gatherings.

Ingredients

  • 6 Tbsp. lime juice
  • 4 Tbsp. balsamic vinegar
  • 6 Tbsp. honey
  • choice of melon cut outs
  • mixed garden greens
  • fresh Parmesan shavings (optional)

Instructions

  1. Whisk lime juice, balsamic vinegar, and honey in a small bowl.
  2. Cut desired shapes from the melons.
  3. Gently fold the melon into the vinaigrette an hour before serving.
  4. Refrigerate until needed.
  5. Arrange greens on a plate.
  6. Place melon on greens and drizzle with additional vinaigrette if desired.
  7. Sprinkle with ribbon shavings of Parmesan cheese.
