Ingredients

  • 2 cups frozen Mexican style corn, thawed
  • 2 teaspoons sugar
  • 1/8 teaspoon ground cumin
  • 1/2 cup frozen egg substitute, thawed
  • Vegetable cooking spray
  • 1 1/2 tablespoons flour
  • 2 tablespoons diced green pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 1 cup evaporated skim milk

Instructions

  1. Combine the thawed Mexican-style corn, sugar, ground cumin, diced green pepper, salt, and ground red pepper in a medium bowl; stir well.
  2. Combine the thawed egg substitute and evaporated skim milk; add to the corn mixture, stirring to combine.
  3. Pour the mixture into a 1-quart baking dish coated with vegetable cooking spray.
  4. Place the baking dish in a 13 x 9 x 2-inch pan.
  5. Pour hot water into the pan to a depth of 1 inch.
  6. Bake uncovered at 350°F (175°C) for 1 hour, or until a knife inserted in the center comes out clean.
