Ingredients

  • 1 lb. ground beef
  • 1 (1 1/2 oz.) pkg. taco seasoning
  • 1 (14 1/2 oz.) can whole tomatoes
  • 1 (8 1/2 oz.) can whole kernel corn
  • 1 (6 1/2 oz.) can Mexican cornmeal mix

Instructions

  1. Prepare cornmeal mix according to package directions.
  2. Grease a shallow 2-quart baking dish.
  3. Brown ground beef in a large skillet and drain excess fat.
  4. Stir in taco seasoning, chopped tomatoes, and corn.
  5. Bring to a boil, stirring occasionally.
  6. Pour the beef mixture into the prepared baking dish.
  7. Pour the prepared cornmeal mix over the beef mixture.
  8. Bake for 15 to 20 minutes, or until golden brown.
