A hearty Mexican casserole layered with seasoned ground beef, beans, cheese, and crispy taco shells, baked to creamy perfection, perfect for family dinners or casual gatherings.

Ingredients

  • 2 lb hamburger
  • 1 box taco shells, broken in half
  • salt to taste
  • pepper to taste
  • garlic salt to taste
  • chili powder to taste
  • 1 large onion, chopped
  • 2 cans pork and beans
  • 1 lb Velveeta cheese
  • 1 can cream of chicken soup

Instructions

  1. Brown the hamburger and drain off the fat.
  2. Line the bottom of a 9 x 13-inch pan with half of the broken taco shells.
  3. Season the cooked hamburger with salt, pepper, garlic salt, and chili powder to your taste.
  4. Sprinkle half of the chopped onion over the seasoned meat.
  5. Pour one can of pork and beans over the onion layer.
  6. Place half of the Velveeta cheese over the pork and beans.
  7. Make another layer starting with the remaining taco shells.
  8. Repeat with the remaining hamburger, onion, pork and beans, and cheese.
  9. Mix the cream of chicken soup and Ro-Tel tomatoes together.
  10. Pour the soup mixture evenly over the layered casserole.
  11. Cover the dish and bake at 350°F (175°C) for 1 hour.
