Ingredients

  • 1 whole chicken
  • 1 onion
  • 1 pkg. (8 oz.) tortilla chips
  • 1 1/2 c. Cheddar cheese
  • 1 can cream of mushroom
  • 1 can cream of chicken
  • 1 can Ro-Tel
  • 1 pkg. Mozzarella cheese

Instructions

  1. Preheat oven to 350°.
  2. Boil chicken and strip off bone.
  3. Saute onion in 2 tablespoons butter and mix with chicken.
  4. Take 3/4 cup of chicken broth, put in a bowl and add cream of mushroom, cream of chicken soup and Ro-Tel and blend them together.
  5. Take a 9 x 13-inch casserole dish.
  6. Put chicken in dish.
  7. Sprinkle a layer of chips, then a layer of mixed cheeses, followed by another layer of chips.
  8. Pour the soup and Ro-Tel mixture on top and layer with the rest of the cheeses.
  9. Bake for 30 minutes.
