Mexican Fudge(Appetizer)
A savory Mexican-inspired appetizer featuring melted cheeses and spicy enchilada sauce, perfect for parties or casual gatherings, served with crispy corn chips or as a main dish.

Instructions
- Combine the grated Cheddar and Monterey Jack cheeses; spread half of the cheese mixture evenly in the bottom of a 9 x 9-inch baking pan.
- Beat the eggs, then mix with the green taco or enchilada sauce.
- Pour the egg and sauce mixture over the cheese layer in the pan.
- Spread the remaining cheese on top of the mixture.
- Bake in a 350°F oven for 30 minutes, or until the eggs are set and the cheese is golden.
- Remove from oven and cool slightly so the eggs and cheese are firm enough to slice.
- Cut into 1-inch squares and serve on corn chips as appetizers.
- Alternatively, cut into 4 to 6-inch squares and serve as a main dish, eliminating the corn chips.
