A savory Mexican-inspired appetizer featuring melted cheeses and spicy enchilada sauce, perfect for parties or casual gatherings, served with crispy corn chips or as a main dish.

Ingredients

  • 1/2 lb. grated Cheddar cheese
  • 1/2 lb. grated Monterey Jack cheese
  • 3 eggs
  • 1/2 cup green taco or enchilada sauce
  • corn chips or nachos

Instructions

  1. Combine the grated Cheddar and Monterey Jack cheeses; spread half of the cheese mixture evenly in the bottom of a 9 x 9-inch baking pan.
  2. Beat the eggs, then mix with the green taco or enchilada sauce.
  3. Pour the egg and sauce mixture over the cheese layer in the pan.
  4. Spread the remaining cheese on top of the mixture.
  5. Bake in a 350°F oven for 30 minutes, or until the eggs are set and the cheese is golden.
  6. Remove from oven and cool slightly so the eggs and cheese are firm enough to slice.
  7. Cut into 1-inch squares and serve on corn chips as appetizers.
  8. Alternatively, cut into 4 to 6-inch squares and serve as a main dish, eliminating the corn chips.
