Ingredients

  • 4 lean pork chops (1 inch thick)
  • 4 thin slices onion
  • 4 thin green pepper rings
  • 1/4 cup uncooked converted rice
  • 1 large can (1 lb. 13 oz.) tomatoes
  • 1/2 to 1 teaspoon salt

Instructions

  1. Trim off any fat from the pork chops.
  2. Season the pork chops with salt and pepper as desired.
  3. Place the chops in a baking dish side by side in the bottom of the dish.
  4. Top each chop with a slice of onion, a green pepper ring, and 1 tablespoon of uncooked rice.
  5. Pour the tomatoes and juice over the chops, making sure all rice is covered with tomato juice.
  6. Sprinkle with additional salt if desired.
  7. Cover the dish tightly with foil.
  8. Bake at 350°F (175°C) for 1 1/2 hours or until the pork is cooked through and tender.
