Flavorful Mexican-inspired stuffed mushrooms with seasoned ground beef, fresh tomato, and melted Cheddar, perfect as an appetizer or party snack for meat lovers and mushroom fans.

Ingredients

  • 1/4 lb lean ground beef
  • 1 Tbsp taco hot sauce
  • 1 small tomato, seeded and finely diced
  • 24 large fresh mushrooms (stems removed)
  • 1/4 cup shredded Cheddar cheese

Instructions

  1. Remove stems from large fresh mushrooms and set aside.
  2. In a bowl, combine lean ground beef, taco hot sauce, and finely diced tomato.
  3. Fill each mushroom cap with the beef mixture.
  4. Sprinkle shredded Cheddar cheese on top of each filled mushroom.
  5. Place stuffed mushrooms in the microwave and cook for 5 1/2 to 7 minutes until heated through and cheese is melted.
  6. Serve warm as an appetizer or snack.
