Creamy, cheesy pan enchiladas feature seasoned ground beef, rice, and rich enchilada sauce, baked to perfection—a satisfying Mexican-inspired dish perfect for family dinners.

Ingredients

  • 1 lb ground beef
  • 3 cups cooked rice
  • 1.5 cups grated cheese
  • 12 corn tortillas
  • 2 cans enchilada sauce
  • 1 small can tomato sauce

Instructions

  1. Brown the ground beef in a skillet until fully cooked.
  2. Heat the enchilada sauce and tomato sauce together in a saucepan.
  3. Dip 6 corn tortillas in the warm enchilada sauce to soften them.
  4. Layer in a baking dish: dipped tortillas, cooked ground beef, cooked rice, half of the cheese.
  5. Add the remaining 6 tortillas without dipping, on top of the layered ingredients.
  6. Pour the remaining enchilada sauce over the layered tortillas.
  7. Sprinkle the remaining cheese evenly over the top.
  8. Bake in a preheated oven at 425°F (220°C) until the cheese melts and browns, about 20 to 40 minutes.
