Mexican stuffed potatoes are a flavorful, hearty dish featuring baked potatoes filled with beans, corn, cilantro, and topped with melted cheese, perfect for a satisfying meal or casual gathering.

Ingredients

  • 2 large potatoes
  • 3 Tbsp. non-fat sour cream
  • 3 Tbsp. fat-free milk
  • 1 c. kidney or pinto beans
  • 1 c. whole kernel corn
  • 2 Tbsp. cilantro
  • Salt
  • Pepper
  • 1/2 c. sharp cheddar cheese

Instructions

  1. Bake potatoes in the microwave until soft, then cut in half lengthwise.
  2. Remove pulp from the potatoes and mash with sour cream and milk.
  3. Combine the mashed potato mixture with cooked beans, drained corn, chopped cilantro, salt, and pepper.
  4. Mound the mixture into the potato skins.
  5. Top each with shredded cheddar cheese.
  6. Bake in a 400-degree oven for 20 minutes until cheese is melted and bubbly.
  7. Serve topped with spicy tomato salsa.
