Ingredients

  • 2 Tbsp. vegetable oil
  • 1 lb. beef loin sirloin steak, boneless and cut into thin strips
  • 1 (16 oz.) can tomatoes, cut up
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 large green peppers, cut into thin strips
  • 2 tsp. cornstarch
  • 2 Tbsp. soy sauce

Instructions

  1. Pour oil into 3-quart microproof casserole.
  2. Add beef, stirring to coat.
  3. Add tomatoes, onion, garlic, salt and pepper.
  4. Cover with casserole lid and cook (micro) on High for five minutes, stirring once.
