Ingredients

  • 5 tablespoons butter or margarine, melted
  • 1 cup cheese-flavored snack crackers, crushed
  • 1/4 teaspoon pepper
  • 4 boneless, skinless chicken breasts
  • 1/2 cup sour cream

Instructions

  1. Place 1 tablespoon of butter in an 11 x 7 x 2 inch microwave-safe dish; set aside.
  2. Combine crushed cheese-flavored snack crackers and pepper in a bowl.
  3. Dip each chicken breast in the remaining melted butter, then spread with sour cream.
  4. Roll the coated chicken in the cracker crumb mixture.
  5. Place the coated chicken breasts in the prepared dish.
  6. Cover loosely and microwave on high for 6-7 minutes or until the chicken juices run clear.
  7. Let stand for 5-10 minutes before serving.
