Juicy chicken breasts or pork chops glazed with sweet apricot preserves, cooked quickly in the microwave for a tender, flavorful meal perfect for busy weeknights.

Ingredients

  • 4 chicken breasts or thick pork chops
  • apricot preserves

Instructions

  1. Make a slit in each chicken breast or pork chop and fill with your favorite stuffing.
  2. Place the stuffed meat on a grooved meat tray.
  3. Spread apricot preserves over the top of each piece.
  4. Place loosely on top with wax paper.
  5. Microwave on full power for eight minutes.
  6. Turn the meat over.
  7. Spread with additional apricot preserves.
  8. Microwave for an additional seven minutes.
  9. Let stand for five minutes before serving.
