Ingredients

  • 3 Tbsp. olive oil
  • 2 c. onion, finely chopped
  • 2 c. water
  • 3 lb. ground meat
  • 1 1/2 lb. ground pork
  • 1 lb. ground chicken gizzard
  • 3 Tbsp. Louisiana hot sauce
  • 3 Tbsp. salt
  • 4 Tbsp. cayenne red pepper
  • 1 c. white wine
  • 1 c. finely chopped parsley
  • 1/2 c. finely chopped green onion tops
  • 2 lb. bag cooked rice

Instructions

  1. In a large pot with the lid on low heat, put in the olive oil and chopped onion.
  2. Stir until the onion is a rich brown.
  3. Add water to stop browning.
  4. Add all the ground meats (beef, pork, chicken gizzard).
  5. Stir every 10 minutes until the meat is browned.
  6. Add Louisiana hot sauce, salt, cayenne red pepper, and white wine.
  7. Cover and cook on medium heat, stirring every 15 to 20 minutes.
  8. Cook for 3 hours, adding more water if needed.
  9. Uncover and cook until the mixture is firm.
  10. Turn off heat.
  11. Add chopped parsley and green onion tops, stir.
  12. Add cooked rice and serve.
