Ingredients

  • 12 oz. can evaporated milk
  • 1/2 cup milk
  • 3 1/8 oz. package coconut cream pudding or pie filling
  • 3/4 cup shredded coconut
  • 2 Tbsp. butter

Instructions

  1. Pour evaporated milk into a 4-cup measure.
  2. Add milk, pudding mix, and 1/2 cup of shredded coconut.
  3. Stir briskly until well combined.
  4. Cook on High in the microwave for 6 to 7 minutes, stirring once halfway through.
  5. Pour the mixture into a prepared crumb crust.
  6. Set aside and place remaining shredded coconut in a 1-cup glass measure.
  7. Add butter to the coconut.
  8. Cook on High in the microwave thoroughly until coconut is lightly browned.
  9. Sprinkle toasted coconut over the pie filling.
  10. Refrigerate until the pie is firm before serving.
