Ingredients

  • 2 (10 oz.) packages frozen chopped spinach
  • 4 eggs
  • 1 cup milk
  • 1 cup Ricotta cheese
  • 1 cup seasoned bread crumbs
  • 1 (14.5 oz.) can diced seasoned tomatoes
  • 1/2 cup Parmesan cheese

Instructions

  1. Thaw the frozen chopped spinach in the microwave and squeeze out all excess water.
  2. In a bowl, beat the eggs with milk, ricotta cheese, and seasoned bread crumbs until well combined.
  3. Add the thawed spinach to the egg mixture and mix well.
  4. Spray a 13 x 9-inch casserole dish with cooking spray and cover the bottom with the diced seasoned tomatoes.
  5. Spread the spinach mixture evenly over the tomatoes in the casserole dish.
  6. Sprinkle Parmesan cheese over the top of the spinach mixture.
  7. Bake at 375°F (190°C) for 30 minutes until golden and bubbly.
