Spinach-Tomato Casserole

- Thaw the frozen chopped spinach in the microwave and squeeze out all excess water.
- In a bowl, beat the eggs with milk, ricotta cheese, and seasoned bread crumbs until well combined.
- Add the thawed spinach to the egg mixture and mix well.
- Spray a 13 x 9-inch casserole dish with cooking spray and cover the bottom with the diced seasoned tomatoes.
- Spread the spinach mixture evenly over the tomatoes in the casserole dish.
- Sprinkle Parmesan cheese over the top of the spinach mixture.
- Bake at 375°F (190°C) for 30 minutes until golden and bubbly.
