Ingredients

  • 3 cups sugar
  • 1/2 cup light corn syrup
  • 2/3 cup water
  • 2 egg whites
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1 cup chopped nuts

Instructions

  1. In a 3-quart microwave-safe bowl, combine sugar, light corn syrup, and water.
  2. Cook on high for 8 minutes or until mixture is clear; stir.
  3. Continue cooking on high for an additional 6 1/2 to 8 minutes or until the syrup reaches 260°F (hard ball stage).
  4. Remove from microwave and beat egg whites with salt until stiff peaks form.
  5. Gradually pour the hot syrup into the beaten egg whites, beating constantly.
  6. Add vanilla and chopped nuts, then beat until the mixture becomes thick and holds its shape.
  7. Drop by spoonfuls onto waxed paper to cool and set.
