Ingredients

  • 1/2 cup minced yellow onion
  • 1 cup arborio rice
  • 3 cups chicken broth
  • 1/4 cup chopped fresh herbs
  • pinch of cayenne pepper

Instructions

  1. Place minced yellow onion in an 11 x 8 1/2 x 2-inch dish.
  2. Cook, uncovered, at 100% power for 2 minutes in a 650 to 700 watt microwave oven.
  3. Stir in arborio rice and cook, uncovered, for 1 minute or until rice is milky-white, but not browned.
  4. Add chicken broth and cook on medium-high power, stirring occasionally, until rice is tender and creamy, about 20-25 minutes.
  5. Stir in chopped fresh herbs and a pinch of cayenne pepper before serving.
