Ingredients

  • 1 lb. ground chuck
  • 3 Tbsp. olive oil
  • 2 large onions
  • 4 cloves garlic
  • 3 large stalks celery
  • 2 medium carrots
  • 1 (19 oz.) can cannellini beans
  • 1 (15 oz.) can light kidney beans
  • 1 (14 oz.) can Great Northern beans
  • 3 c. chicken stock
  • 2 (28 oz.) cans whole tomatoes and juice
  • 1 c. cooked elbow macaroni
  • 1 c. water
  • 1 rounded Tbsp. salt sense
  • 1/2 tsp. red pepper seed
  • 1 tsp. parsley flakes
  • 1 tsp. sweet basil
  • 1 tsp. oregano
  • 1/2 tsp. marjoram

Instructions

  1. Brown ground chuck in a skillet with salt sense and 1/2 teaspoon black pepper.
  2. Simmer, covered, with 1 cup water until the meat is tender.
  3. Heat olive oil in a large pot over medium heat.
  4. Add chopped onions, minced garlic, chopped celery, and julienned carrots.
  5. Cook, stirring frequently, until onions are transparent.
  6. Add cooked ground meat, cannellini beans or light kidney beans, Great Northern beans, chicken stock, crushed tomatoes, and remaining ingredients (except macaroni).
  7. Simmer uncovered for 30 minutes.
  8. Add cooked elbow macaroni and simmer for an additional 2 minutes.
  9. If mixture is too thick, add more chicken stock or water.
  10. Serve hot with bread sticks and top with grated Parmesan cheese.
