Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 c. cooking oil
  • 1/2 c. milk

Instructions

  1. In a mixing bowl, stir together the flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture.
  2. Combine the beaten eggs, cooking oil, and milk. Add all at once to the dry ingredients and stir just until moistened.
  3. Fill paper-lined microwave containers halfway with the batter.
  4. Microwave each muffin for 1/2 to 1 minute at Medium-high (No. 7) until a toothpick inserted in the center comes out clean.
