Microwave Pineapple Crisp

Ingredients

  • 2 Tbsp. quick cooking rolled oats
  • 2 Tbsp. brown sugar
  • 1 Tbsp. flour
  • dash of cinnamon
  • dash of nutmeg
  • 1 c. pineapple chunks
  • vanilla ice cream
  • 1 Tbsp. butter

Instructions

  1. Stir together rolled oats, brown sugar, flour, cinnamon and nutmeg.
  2. Cut in the butter until mixture resembles coarse crumbs. Place pineapple in a 10 ounce casserole dish.
  3. Sprinkle the rolled oats mixture over the pineapple.
  4. Microwave on High for 2 to 4 minutes or until the pineapple is hot.
  5. Rotate dish 1/4 of a turn every minute.
  6. Serve warm with vanilla ice cream.
  7. Makes 1 to 2 servings.
