Ingredients

  • 1/4 to 1/2 cup oil and/or butter
  • 1/2 cup chopped onion
  • 1 cup Italian rice
  • 3 1/2 cups chicken broth and/or white wine
  • 1/2 to 1 cup Parmesan cheese

Instructions

  1. Heat oil or butter in a deep microwave dish for 2 minutes; stir in chopped onion and cook for 4 minutes.
  2. Stir in Italian rice and cook for 4 minutes.
  3. Add chicken broth or white wine and cook for 9 minutes.
  4. Stir and cook for an additional 9 minutes.
  5. Let stand for 5 minutes. If rice is not completely absorbed, cook for 5 minutes more.
  6. Add Parmesan cheese and stir until melted and well combined.
