Microwaved Gingered Chicken

Ingredients

  • 3 lb. drumsticks or thighs (chicken)
  • 1/3 c. honey
  • 1/3 c. chili sauce
  • 1/3 c. soy sauce
  • 1 tsp. ginger
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. cornstarch
  • 2 Tbsp. cold water

Instructions

  1. Arrange meat, skin side up, thickest pieces to outside in a 12 x 7 x 2-inch dish.
  2. I use Reynolds cooking bags.
  3. Mix remaining ingredients, except cornstarch and water.
  4. Cover.
  5. Microwave on High for 10 minutes, rotate 1/2 turn, 10 to 15 minutes more on High, until thickest are done.
