Ingredients

  • 1 c. yellow cornmeal
  • 1 c. sweet milk
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 2 eggs
  • 1 can creamed corn
  • 1/2 c. bacon drippings

Instructions

  1. Brown 1.5 pounds ground meat and drain.
  2. Chop 1 large onion and 1 jalapeno pepper.
  3. Grate 1/2 pound cheese or use sliced cheese.
  4. Mix together the cornmeal, sweet milk, soda, salt, and eggs; set aside.
  5. Pour half of the batter into a large skillet.
  6. Spread grated cheese over the batter.
  7. Spread the ground meat over the cheese.
  8. Add the chopped onions and jalapenos on top.
  9. Pour the remaining batter over the top.
  10. Bake at 350° to 375° for 45 minutes.
