Ingredients

  • 4 squares semi-sweet chocolate
  • 1 cup margarine or butter
  • 3 cups pecan halves
  • 1 3/4 cups sugar
  • 1 cup flour
  • 4 eggs
  • 1 teaspoon vanilla

Instructions

  1. In a small saucepan, melt semi-sweet chocolate and margarine or butter on low heat.
  2. Add pecan halves and stir until well coated.
  3. In a mixing bowl, blend sugar, flour, and eggs on low speed of an electric mixer. Do not beat.
  4. Stir in the melted chocolate and pecan mixture.
  5. Stir in vanilla. Do not beat.
  6. Place paper baking cups in muffin tins and completely fill with batter.
  7. Bake in a 325°F oven for 35 to 40 minutes.
  8. Cool 8 to 10 minutes in muffin tins before removing.
