  • 12 medium onions
  • 6 c. vinegar
  • 6 c. sugar
  • 1 tsp. turmeric
  • 2 tsp. mustard seed
  • 2 tsp. celery seed
  • 4 green peppers

Instructions

  1. Dice cucumbers, onions, and green peppers.
  2. Let stand in salt overnight.
  3. Drain the vegetables.
  4. Boil vinegar, sugar, turmeric, mustard seed, and celery seed for 10 minutes to make the syrup.
  5. Add the drained cucumbers, onions, green peppers, and pimentos to the syrup.
  6. Boil the mixture for 20 minutes.
  7. Can and seal the pickles.

Tips & Substitutions

For a crunchier texture, try adding a bit of sliced radish or carrot to the pickle mixture. If you can't find yellow cucumbers, regular cucumbers work just as well. You can also adjust the sugar level to suit your taste; using honey can add a unique flavor. When boiling the syrup, ensure it's bubbling steadily to help dissolve the sugar completely.

Serving Suggestions

Serve Millionaire Pickles as a zesty side dish at barbecues or picnics, or alongside savory dishes like grilled meats. They pair beautifully with Valentine Vitamin Salad, adding a nice contrast to the fresh greens. Consider serving them in a decorative jar for a charming presentation at gatherings or as a gift.

Storage & Reheating

Store the sealed jars of Millionaire Pickles in a cool, dark place. Once opened, keep them in the refrigerator for up to 3 months. For the best flavor, allow the pickles to sit for at least a week before consuming. They can be enjoyed straight from the jar or as a tangy addition to sandwiches and salads.

Frequently Asked Questions

How long do Millionaire Pickles need to sit before they're ready to eat?

While you can technically eat them right after making, it's best to let Millionaire Pickles sit for at least a week for the flavors to meld together. This resting period allows the cucumbers to absorb the syrup and spices, resulting in a more flavorful pickle.

Can I reduce the sugar in this recipe?

Yes, you can reduce the amount of sugar according to your taste preference. Keep in mind that sugar not only adds sweetness but also helps with preservation, so reducing it too much could affect the shelf life of the pickles.

What can I do if I don't have mustard seed?

If you don't have mustard seed, you can substitute it with a half teaspoon of prepared mustard for flavor, or simply omit it if you prefer. The pickles will still be delicious without it, but the mustard seed adds a nice texture and tang.
