Mim'S Onion Blossums

Ingredients

  • 1 large onion
  • 2 Tbsp. all-purpose flour
  • 1 large egg, lightly beaten
  • 1 c. saltine cracker crumbs
  • vegetable oil
  • 1/2 tsp. salt (optional)
  • commercial dark honey mustard or Ranch dressing

Instructions

  1. Peel onion, leaving root intact.
  2. Cut onion vertically into quarters, cutting to within 1/2-inch of root end.
  3. Cut each quarter vertically into thirds.
  4. Place onion in boiling water for 1 minute; remove and place in ice water for 5 minutes.
  5. Loosen "petals" if necessary.
  6. Drain onion, cut side down.
  7. Place flour in a Ziploc bag; add onion, shaking to coat.
  8. Dip onion in egg.
  9. Place fine cracker crumbs in a Ziploc bag; toss onion to coat.
  10. Chill onion for 1 hour.
  11. Pour oil to depth of 3-inches in an electric fryer or heavy saucepan.
  12. Heat oil to 375°.
  13. Fry onion 5 to 7 minutes or until golden brown.
  14. Drain on paper towels.
  15. Sprinkle with salt, if desired.
  16. Serve with sauce of your choice.
