Ingredients

  • 1/2 tsp. margarine
  • 1/2 cup cooked brown rice
  • 7 to 8 yellow squash
  • 1 (8 oz.) can cream-style corn

Instructions

  1. Rub margarine on the bottom of a 2-quart baking dish.
  2. Parboil the yellow squash and cut into slices.
  3. Add cooked brown rice to the baking dish.
  4. Place the sliced squash over the rice.
  5. Pour cream-style corn over the squash.
  6. Place onions on top of the corn.
  7. Bake at 325°F for 30 minutes.
