Ingredients

  • 4 cups raw peanuts (leave husk on)
  • 2 cups sugar
  • 16 oz. dark Karo syrup (2 cups)
  • 2 tablespoons baking soda

Instructions

  1. Mix peanuts, sugar, and syrup together in a heavy saucepan. Bring to a boil, stirring constantly.
  2. Cook to hard crack (300°F). Remove from heat and stir in baking soda.
  3. Stir very quickly as the mixture will rise rapidly.
  4. Pour onto a baking sheet to cool.
  5. Break into pieces once the brittle is hard.
