Ingredients

  • 2 cups sifted flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 1 egg
  • 1 cup prepared mincemeat
  • 2 tablespoons oil
  • 1/4 cup orange juice

Instructions

  1. Sift dry ingredients; stir in chopped walnuts.
  2. In a mixing bowl, beat the egg, then stir in the mincemeat, oil, and orange juice.
  3. Add the dry ingredients to the wet mixture.
  4. Mix until well blended.
  5. Pour the batter into a greased 8 x 4-inch loaf pan.
  6. Bake at 350°F for about 1 hour or until the bread tests done.
  7. Remove from the pan and cool on a rack.
  8. Chill before slicing.
