Ingredients

  • 1 lb. cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 24 vanilla wafers
  • favorite pie filling

Instructions

  1. With a hand mixer, beat the cream cheese, sugar, eggs, and vanilla until smooth.
  2. Put cupcake liners in a cupcake pan.
  3. Place a vanilla wafer, flat side down, in each cupcake liner.
  4. Add 1 tablespoon of cream cheese mixture on top of each wafer.
  5. Bake for 15 minutes at 375°F.
  6. Do not overbake or cakes will dry out.
  7. Allow the cheesecakes to cool.
  8. Remove from paper cups and top each with 1 teaspoon of pie filling.
  9. Finish by topping with whipped cream and keep refrigerated.
