Mini cherry cheesecakes are delightful bite-sized desserts featuring creamy cheese filling, sweet cherry topping, and crunchy graham cracker crusts, perfect for parties or special occasions.

Ingredients

  • 2 (8 oz.) packages cream cheese
  • 3 eggs
  • 3/4 cup sugar
  • 1 box graham cracker crumbs
  • 1 can cherry pie filling

Instructions

  1. Separate the eggs into whites and yolks.
  2. Beat egg whites until stiff peaks form and set aside.
  3. Mix egg yolks with sugar, then cream in the cream cheese until smooth.
  4. Gently fold the beaten egg whites into the cream cheese mixture.
  5. Use mini muffin cup pans and butter each pan, including the top edge.
  6. Pour in graham cracker crumbs into each cup; shake and pour out excess.
  7. Fill each muffin cup half full with the cheese mixture.
  8. Bake at 325°F (160°C) for 25 minutes.
  9. Remove from oven and top each mini cheesecake with cherry pie filling.
