- Combine graham cracker crumbs, 1/4 cup sugar, and chopped nuts in a medium bowl.
- Add melted butter and mix well.
- Sprinkle 2 cups of the crumb mixture into a buttered 9-inch square baking dish and press firmly to form the base.
- Freeze the crust.
- Put evaporated milk in a medium bowl and freeze until ice crystals form around the edges.
- Beat egg whites and salt until frothy.
- Slowly beat in the remaining 1/2 cup sugar.
- Whip the frozen evaporated milk until stiff peaks form and then add cocoa and instant coffee, mixing well.
- Fold the whipped evaporated milk mixture into the meringue.
- Spread the mocha mixture over the frozen crumb base.
- Sprinkle with the remaining crumb mixture on top.
- Freeze for several hours until firm and ready to serve.
