Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 3/4 cup sugar
  • 1/2 cup nuts, chopped
  • 1/4 cup butter, melted
  • 1 cup evaporated milk
  • 3 egg whites
  • dash of salt
  • 3 tablespoons cocoa
  • 1 teaspoon instant coffee

Instructions

  1. Combine graham cracker crumbs, 1/4 cup sugar, and chopped nuts in a medium bowl.
  2. Add melted butter and mix well.
  3. Sprinkle 2 cups of the crumb mixture into a buttered 9-inch square baking dish and press firmly to form the base.
  4. Freeze the crust.
  5. Put evaporated milk in a medium bowl and freeze until ice crystals form around the edges.
  6. Beat egg whites and salt until frothy.
  7. Slowly beat in the remaining 1/2 cup sugar.
  8. Whip the frozen evaporated milk until stiff peaks form and then add cocoa and instant coffee, mixing well.
  9. Fold the whipped evaporated milk mixture into the meringue.
  10. Spread the mocha mixture over the frozen crumb base.
  11. Sprinkle with the remaining crumb mixture on top.
  12. Freeze for several hours until firm and ready to serve.
