Mini Pecan Delights

Ingredients

  • 1 c. margarine, softened
  • 1 (8 oz.) pkg. cream cheese, softened
  • 2 c. flour
  • 2 eggs
  • 1 1/2 c. light brown sugar
  • 2 Tbsp. margarine, softened
  • 2 tsp. vanilla extract

Instructions

  1. Cream 1 cup margarine and cream cheese. Blend in flour.
  2. Chill dough 1 hour. Shape into 48 balls. Press dough into mini ungreased muffin tins; shape to form little pie shells. Beat together eggs, brown sugar, 2 tablespoons margarine and vanilla. Stir in pecans. Fill each shell.
  3. Bake at 325° for 25 minutes or until filling is set. Cool and remove from pans.
